This simple raw carrot salad recipe is made with only a homemade honey lemon dressing, fresh herbs and carrots. But although the ingredients are super simple the flavors hit all the notes and turn this carrot slaw like carrot salad into the star of the plate!
Since it gets better the longer the flavors meld it’s a great salad to make ahead of time.
I like to make a big batch then use it all week in different ways to top burgers and tacos, as a side salad and as a filling for spring rolls and wraps.
It’s also a great salad recipe for camping, picnics, barbecues etc. Since it’s made without mayo or sour cream it can be left at room temperature without worry.
Ingredients
- Carrots – 1 pound of carrots is roughly 3-4 large carrots, or a bunch of 6-7 small carrots. 1 pound of carrots equals about 3 ½ cups shredded carrots.
- Fresh herbs – you can use both the leaves and stems of fresh herbs in this raw carrot salad. I like the combination of cilantro with the cumin in the dressing. But you can also use parsley or dill.
- Honey lemon dressing – a simple 1/2/3 mixture of 1 part honey, 2 parts olive oil, and 3 parts lemon juice plus a little cumin powder, salt and pepper.
Step by step instructions
- Shred carrots either by hand with a box grater or with a food processor. You can also make elegant long carrot ribbons using a hand peeler for an even more upscale presentation.
- Whisk honey lemon dressing ingredients together in a medium bowl.
- Add shredded carrots to dressing and toss to coat.
- Add chopped herbs and toss to combine.
- Cover and refrigerate at least 30 minutes to allow flavors to meld.
- Season with salt and pepper to taste.
- Enjoy!

Store refrigerated for up to 5 days.
