- 3 medium zucchini about 1 pound, coarsely grated
- 1 large egg light beaten
- ½ cup feta cheese crumbled
- ¼ cup fresh dill chopped
- 2 medium scallions finely sliced
- ½ cup all purpose flour
- 1 teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Coarsely grate zucchini into a colander and toss with 1 teaspoon salt. Place colander in sink and let zucchini drain, pressing out as much liquid as possible after 10 minutes.3 medium zucchini, 1 teaspoon salt

- In a large skillet preheat oil over medium heat to frying temperature of 350 degrees Fahrenheit.
- Working in batches, carefully drop batter into 2 tablespoon mounds in the oil. Gently flatten fritters so they cook evenly and fry until crispy and golden brown, about 2-3 minutes per side.
- Transfer to paper towel lined plate to drain. And immediately season with salt and continue frying remaining fritters.
- Garnish with remaining fresh herbs and serve while hot and crispy.
