Zucchini fritters recipe

This recipe for crispy zucchini fritters is made with a mixture of grated zucchini, eggs and your choice of wide range of other ingredients.

Greek zucchini fritters like this recipe made with zucchini, feta and dill is only one flavor option. Zucchini fritters are such a versatile and adaptable dish that it’s easy and fun to get creative with the flavors and ingredients!

Make Italian zucchini fritters with basil, sun dried tomato and oregano. Or mix up the vegetables and try sweet potato and zucchini fritters. Add fresh corn to make corn and zucchini fritters. Try it with shredded carrots, beets or add other squash like shredded pumpkin, etc.

No matter which method you choose the results will be super crispy with this easy recipe for crispy zucchini fritters with feta!

Ingredients

  • Zucchini – grated. Or a mixture of zucchini and other grated vegetables like sweet potato, carrot, beets, potatoes, etc.
  • Egg – a egg lightly beaten as binder in the fritter batter.
  • Flour – just a small amount of flour used as a binder makes for crispy zucchini fritters rather than fluffy, soft fritters.
  • Feta cheese – zucchini and feta go so well together but you can make the fritters with parmesan or even a little aged white cheddar or gouda instead of feta.
  • Fresh herbs – dill, scallions and whatever other fresh herbs you’d like to add.
  • Salt and pepper
  • Frying oil – a light oil for frying like canola oil.

How to make

  1. Grate zucchini and drain in a colander set in the sink. Or squeeze the grated zucchini to quickly remove the excess liquid.
  2. Stir feta and egg into the drained zucchini until combined. Then add flour and seasoning to make fritter batter.
  3. To prevent having to ask yourself why are my zucchini fritters soggy make delicious crispy zucchini fritters the first time by taking the time to completely preheat your frying oil. Optimal frying temperature of 350 to 370 degrees Fahrenheit for this recipe will ensure that the inside is completely cooked when the outside is perfectly brown and crispy.
  4. Carefully drop zucchini fritter batter into 2 tablespoon mounds using a small cookie scoop or large spoon. To make sure there are little crispy stray bits of zucchini around the edges flatten fritters into little zucchini patties rather than mounds. This also ensures the fritters cook evenly.
  5. Fry in a single layer, in batches, until crispy. About 2-3 minutes per side.
  6. Transfer to a paper towel or parchment lined plate to drain.
  7. Season immediately with coarse salt. And garnish with fresh herbs, if desired.
  8. Serve immediately while hot and crispy.

Air fried zucchini fritters

To make air fried zucchini fritters preheat air fryer to 375 degrees. Air fry in single layer for 7-10 minutes per side.

How to serve

When wondering what to serve with zucchini fritters look no further than a simple dipping sauce for fritters. The best dipping sauce for zucchini fritters is something that is cool and creamy to contrast the hot, crispy fritters.

Something like garlic toum or a lemon dill sauce. Or play up the zucchini and feta pairing and serve whipped feta dip. You can also use simply labneh, aioli or sour cream.

How to store

Serve fritters immediately while still hot and crispy for best flavor and ultimate crispiness.

Or air fried zucchini fritters are also an excellent choice for reheating leftovers. Simply reheat in the air fryer for several minutes until warmed through and crispy. Or freeze leftover cooked fritters and reheat for 8-10 minutes in the air fryer from frozen.

Alternately make batter ahead of time and store refrigerated for up to 24 hours before frying.

Yield

Ingredients

  • 3 medium zucchini about 1 pound, coarsely grated
  • 1 large egg light beaten
  • ½ cup feta cheese crumbled
  • ¼ cup fresh dill chopped
  • 2 medium scallions finely sliced
  • ½ cup all purpose flour
  • 1 teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Coarsely grate zucchini into a colander and toss with 1 teaspoon salt. Place colander in sink and let zucchini drain, pressing out as much liquid as possible after 10 minutes.

  • Add zucchini to a large bowl with the beaten egg, scallions, feta and half the fresh herbs. Stir together. Then stir in flour and black pepper until combined to make the batter.

  • In a large skillet preheat oil over medium heat to frying temperature of 350 degrees Fahrenheit.
  • Working in batches, carefully drop batter into 2 tablespoon mounds in the oil. Gently flatten fritters so they cook evenly and fry until crispy and golden brown, about 2-3 minutes per side.
  • Transfer to paper towel lined plate to drain. And immediately season with salt and continue frying remaining fritters.
  • Garnish with remaining fresh herbs and serve while hot and crispy.
