Zucchini and Feta Fritters are a super crispy zucchini fritter recipe made with grated zucchini, crumbled feta, eggs and dill.

Ingredients
3mediumzucchiniabout 1 pound, coarsely grated
1large egglight beaten
½cupfeta cheesecrumbled
¼cupfresh dillchopped
2mediumscallionsfinely sliced
½cupall purpose flour
1teaspoonsalt
¼teaspoonblack pepper
Instructions
Coarsely grate zucchini into a colander and toss with 1 teaspoon salt. Place colander in sink and let zucchini drain, pressing out as much liquid as possible after 10 minutes.

Add zucchini to a large bowl with the beaten egg, scallions, feta and half the fresh herbs. Stir together. Then stir in flour and black pepper until combined to make the batter.

In a large skillet preheat oil over medium heat to frying temperature of 350 degrees Fahrenheit.
Working in batches, carefully drop batter into 2 tablespoon mounds in the oil. Gently flatten fritters so they cook evenly and fry until crispy and golden brown, about 2-3 minutes per side.
Transfer to paper towel lined plate to drain. And immediately season with salt and continue frying remaining fritters.
Garnish with remaining fresh herbs and serve while hot and crispy.
