Lemon Dill Sauce is a creamy dill sauce recipe made with fragrant dill, sweet white onion, fresh garlic and lemon juice that’s delicious with salmon, cod, meatballs and more.

This simple dill sauce recipe comes together in minutes with sweet white onion, lemon juice, white wine and fresh dill.
I first created it years ago based on a salmon and dill sauce dish I had at small but upscale diner in Acme, Wa when it first opened years ago. Since then the Acme Diner has changed ownership a few more times and although I can no longer vouch for the upscale diner fare that used to grace the menu, I can for sure vouch for this simple but super flavorful lemon dill sauce recipe based on theirs.

Ingredients
- Butter
- Onion
- Garlic
- Lemon juice
- White wine – or substitute chicken or vegetable stock
- Fresh dill – stems and fronds
- Salt and black pepper
Step by step instructions
- In a small to medium saucepan over medium heat high heat sauté diced onion in butter until onion is translucent and soft and starting to brown slightly on the edges, about 5-7 minutes.
- Stir in chopped garlic and cook for about 30 seconds until fragrant.
- Add wine and lemon juice to deglaze the pan, stirring and allowing to simmer long enough to reduce slightly, about 3 minutes.
- Then carefully transfer onion wine mixture to a food processor or blender with fresh dill stems and leaves. Process until smooth.
- Return sauce to pan and bring back to a simmer stirring constantly.
- Reduce heat to low to keep warm, then swirl in remaining 1 tablespoon butter until butter is melted and sauce is glossy.
- Season to taste with salt and pepper and keep warm over low heat until ready to use.
How to serve
It’s a perfect dill sauce for salmon but it also makes a great accompaniment to other seafood dishes like cod, shrimp, oysters and clams. Use it like a dip, dressing, marinade, or sauce paired with lamb, chicken, pasta or vegetables.
