This apple cider syrup recipe is made from simply apple cider (whichever type you have!) that’s been simmered until it reduces to a thick, sweet syrupy mixture with a strong apple flavor.
It can be made in less than an hour and keeps indefinitely in the refrigerator. To be drizzled on salads, sandwiches, cocktails, baked goods and more.
Homemade apple cider syrup also makes a great hostess gift or food gift for the holidays.

Ingredients
- Apple cider – if you have access to an abundance of fresh apple cider you can use that. But this apple cider syrup recipe is also delicious when made with the cheapest store bought apple cider as well. Or I’ve even done this with plain apple juice and it’s delicious.
Step by step instructions
- In a large stockpot bring apple cider to a boil.
- Reduce to a simmer. Simmer uncovered until thick and syrupy. The boiled apple cider syrup is ready when it coats the back of a spoon and leaves a line when you run your finger through it. Or, you will know its ready when it reduces by 75%, from 8 cups down to 2 cups. This can take anywhere from 1 hour to 3 hours, so make sure to keep an eye on it and stir frequently to watch for burning.
- If you notice any little particles in the final syrup you can strain through a fine mesh strainer. But typically the syrup is clear and no straining is needed.
- Pour into in a sterilized jar or bottle. Cover and refrigerate until ready to use.
- Enjoy!

Yield
This recipe starts with a half gallon, or 8 cups, of cider. After reducing down it will yield 1 cup of syrup. But you can adjust the serving size to make more or less syrup as needed.
For example a gallon is 16 cups and will reduce to 2 cups of syrup. ½ gallon of cider is 64 ounces (or 4 cups) and will reduce to ½ cup of cider syrup. And a quart is 32 ounces (or 2 cups) and will reduce to ¼ cup of syrup.
I suggest always making the largest batch you can because it stores so well in the refrigerator and can be used in so many different ways.
How to store
Store apple cider syrup covered in the refrigerator and it will keep for at least several months, if not indefinitely much like maple syrup.
How to use
Apple cider syrup is perfect for drizzling over waffles and pancakes. Or using in apple cider cocktails or as a sweetener for tea or iced coffee.
The sweet apple cider reduction is also great for adding balance to savory apple recipes like roasted vegetables, apple salads and sandwiches with apples.
And, much like molasses, apple cider syrup can be used to add chewy texture and a light apple flavor to baked goods like apple cider cookies, donuts and cakes.
