This lilac syrup recipe is made from only water, sugar and fresh flower petals. Once you learn how to make lilac syrup you will be finding all sorts of uses like sweetening drinks and teas, pouring over baked chicken and pork, brushing on baked goods and so much more!
Ingredients
- Lilac petals – clean lilac petals cut from plants that are far from pollution causing areas like busy roadways. Then carefully pick the lilac petals off the green and stems, removing as much green bits as possible. Lilac petals that are freshly picked from fully open blooms will easily come off the green base when plucked.
- Granulated sugar – or you can use any other sweetener. You can make honey lilac syrup, brown sugar, etc.
- Water
- Optional – lemon juice to react with the anthocyanins in the lilac petals and brighten the pink color, if desired. Or a few frozen cranberries or raspberries will also naturally increase the pink color of the syrup.
How to make lilac syrup
- Bring equal parts water and granulated sugar to a simmer over medium high heat.
- Pluck lilac petals from green stems then clean under cold water and place in a heat proof bowl.
- Carefully pour hot syrup over flower petals.
- Cover syrup and allow to steep until cool.
- Lilacs will begin to impart their color and flavor into the syrup.
- Syrup is done when petals lose color and mixture turns light pink.
- Once finished strain and place in a bottle or jar.

- 1 cup granulated sugar
- 1 cup water
Instructions
- Combine sugar and water in small saucepan and bring to a simmer.1 cup granulated sugar, 1 cup water
- Remove lilac petals from stems and wash with cold water. Drain lilac and add to a heatproof bowl.1 cup fresh lilac petals
- Remove syrup from heat and carefully pour over lilac petals.
- Cover loosely and steep lilac in syrup for 15-20 minutes, or until syrup is cool.
- Carefully pour through a fine mesh strainer to remove solids.
- Pour into an airtight container and store refrigerated until ready to use.
