Garlic Scape Ranch Dressing is a simple garlic ranch recipe made from fresh herbs and garlic scapes, or cloves, for delicious garlic flavor.

This garlic ranch dressing recipe gets its hefty garlic flavor from a combination of fresh garlic scapes and garlic powder. But when garlic scapes are out of season garlic cloves and green onions can be substitute for a similar strong garlic flavor.

Or, if you’re looking for a more traditional herb ranch dressing recipe with less garlic simply omit the garlic scapes and garlic cloves and use only a little garlic powder.
Ingredients
- Garlic scapes – garlic scapes are in season and in abundance at farm stands and farmer’s markets in late spring/early summer, around June. These young tender shoots are actually the stem of the garlic flower and have a garlic flavor that varies from mild to very strong. Garlic scapes at a beautiful mild garlic flavor to all sorts of recipes. And are typically used in sauces like garlic scape pesto, or crunchy homemade garlic scape pickles.
- Mayo – mayonnaise is essential in homemade ranch dressing recipes and should not be substituted.
- Sour cream – for a little extra creaminess and tang. Or you can use plain greek yogurt instead of sour cream, or a mixture of the two.
- Milk – a little whole milk thins the garlic ranch salad dressing with a thinner consistency perfect for drizzling. If you have buttermilk, feel free to substitute buttermilk for even more bright tangy flavor. Or omit the milk altogether to make a thicker garlic ranch dip instead.
- Lemon juice – adds a little bright acidity but you can omit if using buttermilk.
- Dill – fresh dill adds the necessary punch of herb flavor that this ranch dressing made without a packet mix needs. Dried dill can be substituted but please to do not skip the dill.
- Chives – green onions can be used instead of chives if needed.
- Parsley – fresh italian flat leaf parsley. Or used dried parsley instead.
- Onion powder
- Garlic powder
- Salt and pepper
Step by step instructions
- Add garlic scapes to a food processor or high powered blender and pulse until chopped. Add remaining ingredients and pulse several more times until combined. A mortar and pestle of chopping with a sharp knife can work if you don’t have a blender or food processor.
- Pour into a jar or other lidded container. Adding more milk if needed to thin to pourable consistency.
- Cover and store refrigerated until ready to use.

How to use
Use garlic ranch dressing as a salad dressing for arugula salads, green salads or this crisp herb snap pea salad. Use a marinade for chicken or lamb. Pour over baked salmon. Or reduce the milk and use as a dip for vegetable crudites, pizza and more.

Store homemade ranch dressing tightly covered refrigerated for up to seven days.

I love to make this a dairy free ranch dip by using plain greek yogurt alternative and leaving out the milk.
