    A savory strawberry recipe that is super versatile and can be made year round!

    This is a great recipe for when you have a lot of strawberries. Whether you grow strawberries or just purchase them by the flat when you can.

    This summer strawberry recipe is not the typical recipe you will find when searching for things that can be made from strawberry. Like the usual Strawberry Hand Pies, Strawberry Galettes, Strawberry Ice Cream, Strawberry Shortcake and Strawberry Spritzers.

    But although it might not be the most popular this unique strawberry recipe is a winner!

    It’s so versatile and delicious it can be made from fresh strawberries year round, not just in the summer. And it can be served in a variety of ways.

    Ingredients

    • Strawberries – this strawberry recipe is amazing for fresh in season strawberries. But even better, it can be made year round using whatever strawberries you can get your hands on at your local grocer. And even makes not so great tasteless strawberries super flavorful and delicious because the quick marinate in the flavorful dressing ensures that even the not-so-ripe berries are able to go to great use. 1 pint equals 2 cups of strawberries, or 16 ounces.
    • Cucumber – to add a little crunch and extra filler without too much competing flavor.
    • Jalapeno – a fruit salsa with jalapeno means this is a slightly spicy fruit salsa.
    • Scallions “green onions” – or substitute diced red onion.
    • Lime juice
    • Basil – or substitute cilantro, fresh mint or parsley
    • Salt and pepper – to taste
    • Optional – Stir in diced avocado, mango, pineapple, cherry tomatoes or other fruit, before serving.

    Step by step instructions

    1. In a large bowl, whisk together the lime juice, zest and salt.
    2. Stir in jalapeño and onion.
    3. Add cucumber.
    4. Then gently stir in strawberries and basil.
    5. Add salt and pepper, to taste. If you’d like it sweet add a little honey or maple syrup. Or it it needs more acidity add more lime juice.
    6. Serve immediately or allow flavors to meld for 30 minutes or longer before serving.
    7. Enjoy!

    How to serve

    There are lots of things to eat strawberry salsa with! Serve Strawberry Salsa with fish like fish tacos, Macadamia Crusted Halibut, with salmon, with chicken stirred into quinoa salads and rice salads and even with chips as a dip!

    This fruit salsa could also be technically considered a strawberry salad, or an updated fruit salad recipe if you will. Which means you can eat as is with a fork or with a little chopped lettuce stirred in.

    Yield

    Recipe yields about 4 cups of prepared salsa. Or cut in half to make an easy smaller sized serving.

    How to store

    Store Strawberry Salsa covered in the refrigerator for up to 5 days. The flavors will continue to meld the longer it’s stored. Color of the berries may bleed slightly onto cucumber but will not effect on taste.

    Ingredients

    • 1 pint strawberries hulled and diced (2 cups)
    • ½ large english cucumber diced about ½ cup
    • 3 medium scallions finely sliced
    • 1 small jalapeño finely chopped (remove seeds for a less spicy salsa)
    • ½ cup basil leaves thinly sliced
    • 1 small lime zested and juiced
    • Salt and pepper

    Instructions
