A Rhubarb Paloma Cocktail is a fabulous season paloma recipe using rhubarb simple syrup and fresh squeezed grapefruit juice. Whether you make a single serve or turn this into a paloma pitcher recipe this refreshing tequila cocktail is perfect for celebrating Spring.
Paloma recipe
The Paloma is a light and refreshing grapefruit cocktail similar to a classic Salty Dog, which is made with grapefruit juice and gin or vodka served with a salted rim, also known as a Greyhound when served without the salt.
Palomas are made with tequila, similar to a margarita as well. But instead of orange liqueur palomas are typically made with grapefruit soda. This version adds in the flavor of delicious seasonal rhubarb and uses fresh squeezed grapefruit juice instead.
Ingredients
- Grapefruit juice – fresh squeezed or substitute pink grapefruit juice.
- Rhubarb simple syrup – or you can substitute a little fresh smashed rhubarb with sugar.
- Tequila – tequila blanco, or silver, is the best tequila for making margaritas and palomas.
- Lime juice – fresh squeezed.
- Club soda- or substitute sparkling water or grapefruit soda.
- Coarse salt – to add a salt rim to the glass. You can also add tajin seasoning to the salt or lime or grapefruit zest.
Instructions
- Make Rhubarb Simple Syrup up to 7 days in advance.
- Fill a shaker with ice.
- Add grapefruit juice,
- Rhubarb simple syrup,
- Then tequila,
- And a squeeze of lime.
- Shake until cold and frothy.
- Run lime wedge around rim of a tall glass and dip in salt to rim.
- Pour grapefruit mixture into glass.
- Garnish with a rhubarb ribbon.
- Top with a pour of club soda.
- Garnish as desired with rhubarb, lime and/or a grapefruit wedge.
- Enjoy!
Serving size
This is a single serving paloma recipe but can easily be made into a pitcher recipe or even a paloma punch to serve a crowd!

Ingredients
- 3 ounces grapefruit juice fresh squeezed
- 1 ounce rhubarb simple syrup
- 1 ½ ounces tequila blanco
- ½ ounce lime juice fresh squeezed
- 2 ounces club soda
- coarse salt to garnish
Instructions
- Make rhubarb simple syrup by simmering rhubarb with equal parts granulated sugar and water, cool, strain and store for up for 7 days refrigerated.
- Squeeze grapefruit and strain to make fresh squeezed grapefruit juice.
- In a shaker over ice add grapefruit juice, rhubarb simple syrup, tequila and a squeeze of lime. Shake until cold and frothy.3 ounces grapefruit juice, 1 ounce rhubarb simple syrup, 1 ½ ounces tequila blanco, ½ ounce lime juice
- Run lime wedge around rim of a tall glass and dip in salt to rim.coarse salt
- Optionally add a rhubarb ribbon around edge of glass just for looks.
- Pour grapefruit mixture into glass and top with a pour of club soda.2 ounces club soda
