What is rhubarb

- Fresh rhubarb stalks – chopped or shredded into ribbons. Rhubarb is also usually available year round at the grocery store. If you get fresh rhubarb make sure to cut the leaves off the stalks and discard then wash well because rhubarb leaves can be toxic to both animals and people.

Step by step instructions
- Prepare rhubarb by trimming leaves off stalks and washing thoroughly. Rough chop or peel rhubarb into ribbons if planning on turning them into Candied Rhubarb Ribbons.
- In a medium saucepan combine equal parts water and sugar and bring to a simmer to make a standard simple syrup recipe.
- Add rhubarb and simmer until rhubarb releases some juices into the syrup, 2-3 minutes.
- Carefully remove rhubarb syrup from heat and allow to cool.
- Once cool discard rhubarb or save for another use like Candied Rhubarb Ribbons. And pour syrup into a jar or other lidded container.
- Store refrigerated until ready to use.

- 2 stalks rhubarb about 1 ½ cups rough chopped or sliced into ribbons
- ½ cup granulated sugar
- ½ cup water
- Wash and prepare rhubarb by roughly chopping into rounds or slicing into ribbons. If rhubarb stalks still have leaves attached remove and discard then wash thoroughly before preparing.
- Bring equal parts water and granulated sugar to a boil over medium heat then add rhubarb and simmer slightly.
- Remove from heat and allow to cool.
- Once cool, remove rhubarb solids and either discard or save for another use.
- Store, covered, refrigerated for up to 7 days.
