The Lime in the Coconut Cocktail is a coconut lime cocktail that is both luscious and smooth and fresh and bright at the same time.
It’s basically a key lime pie martini similar to my lemon meringue martini made with coconut rum, citrus juice and vodka.
It’s a perfect green cocktail recipe for St Patrick’s day and whenever else you feel you need to put the lime in the coconut and drink them both up 😉
Ingredients
- Coconut rum – Malibu coconut rum is the most common coconut rum but you can use any brand of your favorite coconut liqueur infused rum.
- Vanilla vodka – or you can use plain vodka with a splash of vanilla extract if you have that on hand.
- Pineapple juice – pineapple juice adds sweetness and flavor to this pie cocktail recipe.
- Lime juice – fresh squeezed or bottled lime juice will work.
Step by step instructions
- Place cocktail shaker in freezer to cool.
- Fill shaker with ice and add alcohol, followed by juices.
- Shake to chill.
- Pour into martini glasses.
- Garnish with a slice of lime if desired.
- Enjoy!

This recipe yields one cocktail but can easily be increased to serve more using the recipe serving size below.
And it’s also easy to convert it to a big batch cocktail recipe instead. Simply increase the serving size to 8. Pour all ingredients into a large pitcher and store refrigerated. Fill pitcher with ice when ready to serve. Then pour into individual glasses. Optionally serve alongside sparkling water to top the drinks to make a refreshing coconut lime pitcher cocktail.
