Mini watermelon cakes
Inspired by a simple Mexican dessert, tortas de sandia, these mini watermelon cakes are made with freshly whipped chantilly cream, watermelon and fresh blueberries. Delicious and refreshing for any day, especially warm summer days. And the red white and blue bites are also perfectly festive for the 4th of July!
Ingredients
- Watermelon – there are lots of types of watermelon. The different watermelon varieties range from color white watermelon, purple watermelon, green watermelon. To growing method like heirloom watermelons, conventional watermelons or organic watermelon. And size or seed options. A mini or personal seedless watermelon is preferred but in the end the most perfect watermelon for this recipe is whichever watermelon is easily available to you. I
- Chantilly cream – Chantilly cream is simply another name for whipped cream sweetened with confectioners sugar, also known as powdered sugar. The cornstarch in confectioners sugar stabilizes the freshly whipped cream allowing it to maintain its shape for longer than whipped cream sweetened with granulated sugar. You can also make stabilized whipped cream with a little Jello vanilla pudding packet powder. Or you can substitute Cool Whip if you’d like. Do not use aerosol whipped topping like Reddi Wip brand which will deflate immediately. You can also try these with Lemon Marscarpone Dip or Berry Whipped Cream.
- Blueberries – the little burst of fresh blueberry flavor adds flavor and texture contrast to the crisp watermelon and sweet Chantilly cream. You can substitute cherries or other berries for the blueberries if you’d like in this recipe and make strawberry watermelon bites, raspberry watermelon bites, etc.
- Garnish – optional. Feel free to add a little sprinkle of fresh mint. Watermelon and mint are always great together. Edible flowers look beautiful too. Or sprinkle with a little ground cinnamon or even Tajin to add Mexican fruit cup inspired spice!
Step by step instructions
- Whip cold cream and powdered sugar to make chantilly cream, or stabilized whipped cream, up to 3 days in advance and store refrigerated.
- Using a chef’s knife, slice a small portion of the watermelon rind off. Use the flat edge to stabilize the watermelon on a cutting board. Peel watermelon rind. Then slice watermelon into evenly thick slices. And cut into any shape you desire.
- Scoop a small hole out of the center.
- Next, pat the top of each individual shape dry with a paper towel or clean kitchen towel.
- Using a piping bag fitted with a star tip pipe whipped cream onto watermelon.
- Top each piece of cream filled watermelon with a blueberry.
- Serve and enjoy!
How to serve
- You can serve this delicious blueberry watermelon bite sized fruit salad as shown by cutting shapes out of watermelon and eating by hand as an appetizer or snack.
- It’s also so fun to serve watermelon soft serve style. Leave the watermelon rind on, and slice in 2″ thick quarters. Then hollow out a space in the center of the slice to fill with cream.
- Serve as watermelon parfait layered in individual cups.
- Or serve like a watermelon pizza. Slice watermelon into large circles with the rind on. Then spread the cream on top and sprinkle on the blueberries.
- To easily serve a large crowd simply cube watermelon and serve like a traditional old fashioned fruit salad recipe lightly tossed together and served with a spoon.
Shelf life
Making chantilly cream that’s sweetened with a hefty amount of confectioners sugar helps to stabilize the whipped cream so that you can assemble these little bites up to a day in advance. But it’s really best to assemble before serving if possible.
