Whether for a delicious summertime treat or as fun diy party food ice cream floats are always so good! But even better when made with fresh fruit and sparkling water!
With naturally flavored sparkling water as a soda replacement and fresh strawberry puree this updated summertime classic is purely delicious and super fizzy!
I’m all about fun floats and mixing it up with lots of unexpected flavors and options. This Strawberry Kiwi Ice Cream version uses a fresh strawberry juice, vanilla ice cream and Strawberry Kiwi Sparkling Ice. But you can use any fruit puree or juice, ice cream, sorbet or gelato and whichever Sparkling Ice you desire.

Ingredients
- Strawberry puree – made from strawberries, granulated sugar, lemon juice and water.
- Vanilla ice cream
- Strawberry Kiwi Sparkling Ice
- Fresh kiwi and strawberries, sliced for garnish
Step by step instructions
- Make a homemade strawberry puree by warming clean, hulled strawberries with sugar, a little water and a splash of lemon juice. Then puree while still slightly warm and strain to remove seeds. Store refrigerated until ready to use (up to 4 days in advance).
- When you’d like a fresh strawberry float simply place a layer of the fruit puree in the bottom of a tall glass.
- Top with a couple couple scoops of good quality ice cream.
- Then finish with a pour of fizzy fun flavored water like Strawberry Kiwi Sparkling Ice.
- Garnish with a fresh strawberry if you’d like.
- Serve with a straw and long handled spoon.
- Enjoy!
Serving size
This fresh strawberry float recipe is for a single serving. But the serving size can easily be adjusted in the recipe below.
Serving a crowd? Make it a strawberry punch by pouring 4 cups of fresh strawberry puree into a large punch bowl with ½ gallon vanilla ice cream and 4 bottles of Strawberry Kiwi Sparkling Ice. Use frozen kiwi slices and strawberries to keep the punch cool and signal what’s inside.

Ingredients
- ¼ cup strawberry puree
- ½ cup vanilla ice cream
- ½ cup Strawberry Kiwi Sparkling Ice
- ½ small kiwi sliced for garnish
Strawberry puree
- ½ cup strawberries clean and hulled
- 1 tablespoon granulated sugar
- 1 tablespoons water
- ½ teaspoon lemon juice
Instructions
- Pour strawberry puree or strawberry juice in the bottom of a tall glass. Add 3 small scoops of ice cream and fill with Strawberry Kiwi Sparkling Ice.¼ cup strawberry puree, ½ cup vanilla ice cream, ½ cup Strawberry Kiwi Sparkling Ice
- Garnish with sliced kiwi and strawberries if desired. Serve with a straw and a spoon and enjoy!½ small kiwi
Strawberry puree
- Place berries, granulated sugar and water in small saucepan over low heat. Bring to a simmer until sugar is dissolved and berries are heated through. Carefully transfer to a food processor or blender and puree until smooth then place a fine mesh strainer over a medium bowl and strain the berry mixture to remove seeds. Discard solids and place berry sauce in refrigerator to chill until ready to use, at least 30 minutes up to 4 days.½ cup strawberries, 1 tablespoon granulated sugar, 1 tablespoons water, ½ teaspoon lemon juice

This sparkling ice water is a great replacement for soda. During the Summer the fruits are so sweet. There is no need to have extra sugar
