Growing up in the particular area of the Pacific Northwest where I did, strawberries were life. Your first job was most likely picking strawberries in a field. And my husband even admitted to me the other day that growing up he thought strawberry was the only. fruit. That’s how much we love strawberries in my area.
Strawberry season is in Spring in the United States, typically from mid May to early July. And I grew up with lots of options for strawberry picking near me as well as an annual Strawberry Festival where the entire town (and the neighboring towns as well) would come out to celebrate the strawberry, which is actually not technically a berry, but rather a collection of many tiny single-seeded fruits.
But if we’re being technical neither blackberries or raspberries are true berries either. But this recipe is actually not really a true recipe either, so it’s totally fitting.
Because although there are lots of fresh strawberry recipes and recipes using frozen strawberries on this site. This is not one of those strawberry recipes.
Pop Tart Strawberry Ice Cream Sandwiches are simply quick, delicious, nostalgic desserts that are perfect for summer.
Made from simply strawberry Pop Tarts and ice cream.
Of course, you could throw some fresh sliced strawberries in there for good measure I suppose.
Ingredients
- Strawberry Pop Tarts – Pop Tarts make a delicious alternative ice cream sandwich cookie because they maintain a firm but pie crust like texture after freezing. And they come complete with both a flavor filling and typically icing and decorations on top. Try mixing up the Pop Tart variety and ice cream flavors to make your own easy creative ice cream sandwich flavor combinations.
- Ice cream – vanilla ice cream, strawberry ice cream, coconut ice cream or any other ice cream flavor you desire. You can use blueberry gelato, homemade strawberry swirl ice cream or summer berry ice cream.
Step by step instructions
- Cut ice cream layer. If using homemade ice cream spread on frozen sheet pans and freeze solid. Then cut into rectangles to fit the Pop Tarts. Or if using store bought ice cream in paper cartons simply slice through the cartons to cut ice cream into desired thickness then trim ice cream into rectangles.
- Layer cut ice cream between two strawberry Pop Tarts.
- Place on a single layer on a large platter or sheet pan.
- Freeze again until solid, wrapping in parchment paper and twine, if desired.
- Serve as is or cut each Strawberry Pop Tart Ice Cream Sandwich in halves or thirds.

Instructions
- Cut ice cream layer. Slice through ice cream cartons to cut ice cream into desired thickness then trim ice cream into rectangles. Or spread ice cream on frozen sheet pans and freeze until solid, then cut into rectangles.½ gallon vanilla ice cream
