Warmer weather and laid back days call for light, refreshing cocktail recipes. And this low alcohol pineapple cocktail recipe hits all the requirements with the bonus of tropical flavor thanks to a splash of coconut water and spiced rum.
Ingredients
- Pineapple juice – when making a simple pineapple juice cocktail like this it’s best to use fresh squeezed pineapple juice for the freshest flavor. But you can also substitute canned pineapple juice.
- Coconut water – coconut water adds a light coconut flavor but can be omited for a stronger pineapple cocktail.
- Rum – you can use white rum for rum pineapple cocktails. But the tropical flavor of pineapple really makes a spiced rum like Captain Morgans or The Kraken the best rum for pineapple cocktails. Coconut flavored Malibu rum also makes a great rum option for this rum spritzer. If using Malibu you can omit the coconut water and it will still have the same light refreshing pina colada flavor.
- Lime juice
- Seltzer – seltzer or sparkling water is best to use in spritzers. I really love the super carbonation of high quality sparkling waters like Topo Chico or San Pellegrino. But you can substitute club soda which is very similar to seltzer with the addition of extra minerals, sodium bicarbonate and potassium sulfate, which give it a slightly salty taste. Or substitute sparkling water in flavors like coconut or pineapple for even more flavor or ginger ale for added sweetness.
- Garnish – pineapple leaves, pineapple wedges or spears and or lime wedges or wheels all make fabulous garnish for this rum cocktail. You can even add a shredded coconut rim if you’d like.
Step by step instructions
- In a large ice filled shaker measure fresh squeezed pineapple juice, coconut water, lime juice and rum.
- Shake until super cold and frothy. I like to shake this pineapple cocktail rather than stir to increase the foamy top layer that separates as a result of the compounds in the pineapple. But if you’d rather minimize the foam, simply stir rather than shake.
- Pour into a tall glass, holding back ice as needed to fill the glass about ¾ full.
- Top with a pour of seltzer water.
- Garnish as desired and serve immediately.

How to serve
Serve this pineapple spritzer over ice in a tall glass. Or make a frozen pineapple cocktail and blend all ingredients until smooth. You can increase the serving size to easily make it a pitcher cocktail rum spritzer for a crowd. Simply measure 1 ½ cups pineapple juice, ½ cup coconut water, ½ cup spiced rum and ½ cup lime juice into a large pitcher. Then top with ice and seltzer before serving.
