Peanut Butter Rice Krispie Treats Recipe
Rice Krispie Treats made with peanut butter have been a staple snack dessert in my family for many years. Made from a family favorite recipe passed down from my stepmom. These peanut butter rice krispie treats are made from only butterscotch chips, Rice Krispies and peanut butter!
They come together in minutes and keep fresh for days. The perfect sweet treat for lunches, picnics, road trips, potlucks and wherever your adventures take you.
Ingredients
- Crispy rice cereal – this recipe calls for 5.5 cups of rice krispies. Which is about 6 ounces of cereal or half of a standard size cereal box.
- Smooth peanut butter – this recipe calls for 1 cup of peanut butter. Which is about 8 ounces or half of a regular jar of peanut butter.
- Butterscotch chips – found in the baking aisle of grocery stores butterscotch chips are similar to chocolate chips. They add a nice flavor and sweetness and allow you to make peanut butter rice krispie treats without karo syrup or marshmallows. This recipe calls for 1 ¾ cup butterscotch chips which is about 11 ounces of chips, or a standard size bag.
Step by step instructions
- Measure cereal into large bowl and prepare 13×9″ pan by lining it with parchment paper and lightly greasing the paper.
- In a medium microwave safe bowl heat peanut butter and butterscotch chips in the microwave. Stirring every 30 seconds until smooth for about 2 ½ minutes total.
- Once smooth pour peanut butter mixture over Rice Krispies and stir until evenly coated.
- Pour peanut butter rice krispies into prepared pan. Allow to cool and set up at room temperature until firm, about 2 hours. To make chocolate peanut butter rice krispie treats simply melt chocolate chips and pour over the top while the peanut butter krispies are cooling. Similar to this chocolate peanut butter fudge.
- Once cool lift parchment to easily remove peanut butter krispies from the pan.
- Use a serrated knife to cut into clean squares.
- Enjoy!
