Ground Beef and Broccolini Stir Fry is a quick beef and vegetable stir fry recipe served with a sticky brown sugar soy stir fry sauce.

I created this sticky beef and broccolini stir fry recipe in partnership with Genuine Skagit Valley agricultural association to showcase the versatility of ground beef from local ranch Mesman Farms and various farmstand fresh vegetables.
It’s a delicious ground beef and vegetable stir fry recipe that can be served over rice or noodles. Or used as a filling for lettuce cups.
No matter how you serve it you’re going to love this ground beef stir fry!
Ingredients
- Fresh vegetables – this skillet stir fry recipe calls for fresh broccolini and snow peas. But you can substitute broccoli, cauliflower, cabbage, zucchini or whichever farmstand fresh seasonal vegetables you have on hand. Just keep it to about 2 cups of chopped vegetables per 1 pound of beef.
- Ground beef – or substitute sliced steak, sliced chicken breast or your favorite stir fry protein instead.
- Raw almonds – or other nut like hazelnuts, cashews or peanuts.
- Seasonings – garlic, scallions, brown sugar, red pepper flakes, black pepper, garlic powder, salt.
- Homemade stir fry sauce – soy sauce, water and cornstarch.
- Fresh herbs – fresh cilantro, basil, chives, etc.
Step by step instructions
- Fry whole almonds in a hot skillet for several seconds to toast. Then remove toasted almonds and set aside for later.
- Wipe out skillet and return to high heat to cook vegetables, stirring constantly, until just beginning to brown and blister. Then remove stir fried vegetables and set aside for later.
- Once almonds are toasted and vegetables are blistered return the pan to high heat and add ground beef seasoned with salt, garlic, red pepper and black pepper, breaking up into little pieces to brown. Once ground beef is browned and crispy in spots, add brown sugar to coat.
- Meanwhile, make stir fry sauce with soy sauce, water and cornstarch.
- Once beef is coated with brown sugar, return vegetables to pan. Then stir in soy stir fry sauce and bring to a simmer until sauce is bubbly and thickened.
- Remove from heat and serve topped with fried almonds and fresh herbs in lettuce cups or over rice. You can also make puffed rice to use as a crispy topping for the beef and broccolini stir fry.

Ingredients
- 3 tablespoon canola oil divided
- ¼ cup almonds
- 1 cup broccolini sliced into bite sized pieces
- 1 cup snow peas
- 1 pound ground beef
- ⅛ teaspoon red pepper flakes
- Salt and black pepper
- ¼ teaspoon garlic powder
- 1 tablespoon brown sugar
- 2 medium scallions thinly sliced
- 1 clove garlic thinly sliced
- ¼ cup soy sauce
- ¼ cup water
- 1 tablespoon cornstarch
- 2 tablespoons fresh basil
- 2 tablespoon fresh cilantro
Instructions
- Heat 1 tablespoon cooking oil in a large skillet over medium high heat and add almonds. Fry almonds, stirring constantly, until toasted. About 30-45 seconds total. Remove fried almonds to towel lined plate to drain.3 tablespoon canola oil, ¼ cup almonds
- Wipe out skillet with paper towel and return pan to medium high heat with another 1 tablespoon cooking oil. Add vegetables to hot pan and cook until just beginning to brown and blister, stirring constantly. Remove vegetables from pan and set aside. Again, wipe pan clean and return to medium high heat.1 cup broccolini, 1 cup snow peas
- Add remaining 1 tablespoon cooking oil and ground beef to hot skillet, break up beef into small pieces while browning. Season ground beef with salt, black pepper, garlic powder and red pepper flakes. Once ground beef is browned add sliced garlic and scallions and continue cooking until aromatics are softened and begin to brown. Then add brown sugar to mixture in skillet and stir to coat.1 pound ground beef, ⅛ teaspoon red pepper flakes, Salt and black pepper, ¼ teaspoon garlic powder, 2 medium scallions, 1 clove garlic, 1 tablespoon brown sugar
- Meanwhile, combine soy sauce, water and cornstarch in a small bowl and whisk to combine.¼ cup soy sauce, ¼ cup water, 1 tablespoon cornstarch
- Once ground beef/garlic mixture is completely coated with sticky brown sugar return sauteed veggies to pan. Stir in soy mixture and bring to a simmer.
- Once bubbly and thickened remove from heat and top with fried almonds and fresh herbs.2 tablespoons fresh basil, 2 tablespoon fresh cilantro
