Rhubarb soda is a refreshing homemade soda recipe that is perfect in early spring when rhubarb is in season.
This rhubarb drink couldn’t be easier to make! The ingredients are simply homemade rhubarb simple syrup and sparkling water.
Adjust the sweetness to your own tastes by including more or less rhubarb syrup. And adjust the flavors too by using plain sparkling water or a flavored sparkling water instead. You can even include a shot or two of vodka, tequila or gin to make an easy rhubarb cocktail.
However you choose to serve it this rhubarb drink is so refreshing and delicious served on a warm spring day and during spring celebrations like Easter and Mother’s Day.
Ingredients
- Rhubarb syrup – made from rhubarb stalks, water and granulated sugar.
- Sparkling water – you can choose plain sparkling water or flavored sparkling water.
Step by step instructions
- Make rhubarb syrup by simmering chopped rhubarb with granulated sugar and water. Strain and store refrigerated for up to 7 days.
- When ready to enjoy pour rhubarb syrup in a large glass and top with sparkling water.
- Add ice if desired.

But you can make the rhubarb syrup up to 7 days in advance and store refrigerated until ready to use.

Each serving of rhubarb soda is roughly 8 ounces or 1 cup. The serving size can easily be adjusted in the recipe below. And the sweetness and amount of rhubarb syrup can easily be adjusted to be more or less sweet depending on your individual preferences.
