Or anytime there’s cause for a celebration. Like when unexpected guests drop by on a Friday night or the year changes from one to the next.

How to Make Ginger Infused Syrup and Ginger Cocktails
If you’re currently asking yourself (and google) ‘what is simple syrup?’ then please friend, allow me to introduce you to one of my favorite techniques.. making homemade simple syrup! Frequently used to sweeten all liquids simple syrup is merely equal parts sugar and water simmered until clear. Because it’s already combined it easily dissipates even in cold beverages and is perfect for cocktails, mocktails, sparkling water and more! And since it’s homemade you can infuse your simple syrup with whatever fruits, herbs, and spices you can dream up!
One of my favorite flavors to infuse into homemade syrup is ginger! Probably because of my love for a good strong ginger beer and ginger cocktails in general. But, also because ginger has a nice warming flavor that complements so many others so well. And of course, the loooong list of ginger’s health benefit claims are not to be ignored.
And another thing that’s great about making homemade ginger syrup is that you can turn the ginger pieces that infuse the ginger syrup into candied ginger to use as garnish! So much flavor with zero waste 🙂
To make candied ginger simply remove ginger pieces from the infused syrup and place on cooling rack. When slightly dried and tacky, after about 20-30 minutes, toss em in a bowl of sugar and give them a good sweet coating.
The ginger syrup and the candied ginger will keep for up to 3 months. Just cover the candied ginger and keep the syrup refrigerated and you will be enjoying festive cocktails and mocktails all season long!

Ingredients
- 1 tablespoon ginger syrup
- 4 ounces sparkling wine or champagne
Ginger Syrup
- 1 cup granulated sugar
- 1 cup water
- 3 inches fresh ginger
Instructions
- Make ginger syrup. Combine all ingredients in a medium saucepan over medium heat. Bring to a simmer, remove from heat and steep for at least 3 hours up to 12. Strain and store up to 6 weeks in the refrigerator.
- Pour ginger syrup into tall glass or champagne flute. Top with a pour of chilled sparkling wine or champagne. enjoy!
