Lavender syrup
Lavender syrup is a type of homemade simple syrup made from equal parts sugar and water infused with lavender flowers or lavender buds. Simple syrup is commonly used to sweeten cocktails and iced beverages, like iced tea and lemonade, because of how easily it dissolves in cold liquids. But it can also be used to make all sorts of lavender recipes like baked goods and more.
Lavender syrup is naturally clear or amber colored and rarely is it purple without the use of food coloring. But don’t let the lack of color fool you, the flavor and fragrance of lavender syrup can not be missed.
If you’d like a naturally colored lavender syrup you can steep several fresh or frozen blueberries in simple syrup to make a blueberry lavender syrup.
Ingredients
- Granulated sugar – to make a lavender syrup without sugar try lavender honey syrup by simply substituting honey for the sugar and adding slightly less water. Or make a brown sugar syrup using light brown sugar instead of granulated.
- Water
- Lavender – fresh or dried lavender flowers and buds. You don’t want to use the leaves or stems of lavender in syrup or else it will taste bitter. Lavender is available in in the late spring and early summer when you can find it in abundance at farm stands, farmers markets, from neighbors and maybe in your own yard if your grow your own.

Step by step instructions
- Combine granulated sugar and water in a small saucepan. Simmer just until sugar dissolves.
- Remove from heat, sprinkle lavender flowers over warm syrup.
- Stir to combine.
- Steep lavender in syrup for 10-15 minutes depending on desired strength.
- Carefully pour through a fine mesh strainer to remove solids.
- Store in an airtight container and refrigerate until ready to use.
