Lavender syrup

Lavender syrup is a type of homemade simple syrup made from equal parts sugar and water infused with the edible flowers or buds of lavender. Simple syrup is commonly used to sweeten cocktails and iced beverages, like iced tea and lemonade, because of how easily it dissolves in cold liquids. But it can also be used to make all sorts of lavender recipes like baked goods and more.

Lavender syrup is naturally clear or amber colored and rarely is it purple without the use of food coloring. But don’t let the lack of color fool you, the flavor and fragrance can not be missed.

For a colored mixture you can steep several fresh or frozen blueberries in the simple syrup to make a blueberry lavender syrup that has a beautiful light purple color.

Ingredients

  • Water
  • Granulated sugar – to make a lavender syrup without sugar try substituting honey for the sugar and adding slightly less water. Or make a brown sugar syrup using light brown sugar instead of granulated.

  • Lavender – fresh or dried lavender flowers and buds. You don’t want to use the leaves or stems of or else it will taste bitter. Lavender is available in in the late spring and early summer when you can find it in abundance at farm stands, farmers markets, from neighbors and maybe in your own yard if your grow your own.

Step by step instructions

  1. Combine granulated sugar and water in a small saucepan. Simmer just until sugar dissolves.
  2. Remove from heat, sprinkle lavender flowers over warm sugar water mixture.

  1. Stir to combine.

  1. Steep lavender in syrup for 10-15 minutes depending on desired strength.
  2. Carefully pour through a fine mesh strainer to remove solids.

Ingredients

  • ½ cup fresh lavender flowers and buds, stems and leaves removed or substitute ¼ cup dried lavender
  • 1 cup granulated sugar
  • 1 cup water

Instructions

  • Combine granulated sugar and water in a small saucepan.

  • Simmer just until sugar dissolves.
  • Remove syrup from heat, sprinkle lavender over warm syrup and stir to combine.
    ½ cup fresh lavender
  • Steep lavender in syrup for 10-15 minutes depending on desired strength.
  • Carefully pour through a fine mesh strainer to remove solids. And pour into an airtight container.
  • Store refrigerated for up to 3 weeks
