Separate shredded cheese into 4 equal portions. Press each portion into a flat disc.
6 ounces gouda
Place one cheese disc into the center of each of the burger patties, bringing edges of patties up and around the cheese disc, pressing on the top to seal and form thick burger patties.
In a large cast iron pan, or barbeque, over medium heat, cook burger patties until evenly browned and cooked through, about 3-4 minutes on each side, or until beef registers 130-165 degrees Fahrenheit.
Toast buns if desired, then add chili onion jam to bottom bun. Top with a pile of arugula then burger patty. Finish with quick pickled vegetables, crispy fried onions and another chili onion jam slathered bun.
