Ingredients
3cupscooked white chickpeascanned or fresh cooked, also called garbanzo beans, chaat or chole
1largerusset potatoboiled, peeled and diced
1mediumtomatodiced
1medium red onionchopped
1mediumbell pepperseeded and diced
¼cupfresh cilantro leaveschopped
2teaspoonslemon juice
1teaspooncumin powder
1teaspoonsmoked paprika
1teaspoonchaat masala
½teaspoonsalt
Instructions
Steam or boil potato, allow to cool. Then peel and dice potato. Drain canned chickpeas and rinse well. Or cook dried chickpeas using whichever method you like and fully cool.
3 cups cooked white chickpeas, 1 large russet potato
In a large bowl combine cumin, paprika, chaat masala and salt. Toss drained chickpeas and diced cooked potato in spices to coat and refrigerate until ready to serve, up to 4 days.

When ready to serve stir in freshly chopped tomatoes, onions, and cilantro. And season with lemon juice and additional salt to taste.
