Ingredients
1smallwhite onionchopped

1cupsquashsliced
2cupssquash vinescut into small 1 ½ inch pieces
8wholesquash blossoms
1cupsquash leaves and tendrilspacked
2tablespoonscanola oil
4cupsvegetable stock
1cupcorn kernels
1wholelime optional - sliced, for serving
Masa dumplings
¾cupmasa
½teaspoonsalt
½cupwarm water
2tablespoonschopped cilantrooptional- or Oaxacan herbs like pepicha and papalo
Instructions
Make masa dumplings by combining warm water with salt and masa in a medium bowl. Knead dough until soft and smooth and form into small balls. Cover with a damp towel until ready to use.
¾ cup masa, ½ teaspoon salt, ½ cup warm water, 2 tablespoons chopped cilantro
Heat oil in a large pot over medium heat until shimmering. Add chopped onion and cook until slightly softened, about 3 minutes. Then add whole pepper, minced garlic and corn kernels. Cook until corn is softened, stirring frequently, about 2 minutes.

Remove chili pepper and add chopped squash and squash vines. Cook slightly, about 2 minutes.

Add stock and bring soup to a boil.

Carefully add squash leaves, tendrils and blossoms to boiling soup then reduce to a simmer.

Then finish by adding masa dumplings to the simmering soup. Continue to simmer for about 5 minutes or just until dumplings float on the surface being careful not to overcook.
