Place ground beef in a large bowl and season with salt and pepper. Toss to combine then divide in 4 equal pieces. Then form in to 4 thin burger patties.
1 ½ - 2 pounds ground beef, ¾ teaspoon salt, ½ teaspoon black pepper
Divide goat cheese into 4 coin shaped rounds. Then place a piece of goat in the center of each burger patty bringing burger up around sides, gently sealing at the top to form an even patty. Press gently with thumb to slightly indent the top and help the patty maintain shape while cooking.
4 ounces goat cheese
Preheat grill to medium high.
Season burger patties with a light sprinkle of salt and pepper, then place on preheated grill and cook to 160 degrees Fahrenheit, about 2-3 minutes per side.
Meanwhile, toast buns lightly and smear each side with roughly 1 tablespoon sweet onion chili jam.
4 large brioche buns, ½ cup sweet onion chili jam
Assemble goat cheese burgers by topping bottom bun with arugula followed by the goat cheese stuffed burger patty topped with pickled red onions and the top bun.
½ cup arugula, 4 slices pickled red onions
