Cut ice cream layer. If using homemade ice cream spread on frozen sheet pans and freeze solid. Then cut into rectangles to fit the Pop Tarts. Or if using store bought ice cream in paper cartons simply slice through the cartons to cut ice cream into desired thickness then trim ice cream into rectangles.
Layer cut ice cream between two strawberry Pop Tarts.
Place on a single layer on a large platter or sheet pan.
Freeze again until solid, wrapping in parchment paper and twine, if desired.
Serve as is or cut each Strawberry Pop Tart Ice Cream Sandwich in halves or thirds.
