Instructions
Preheat the oven to 350 degrees.
In a large bowl beat granulated butter and sugar until fluffy and lighter in texture and color. Then add the eggs, one at a time, fully incorporating after each addition.
1 cup unsalted butter, 1 cup granulated sugar, 2 large eggs
Beat in lime juice, reserving about a tablespoon to later use for the blackberry glaze.
⅔ cup fresh squeezed lime juice
Whisk flour, baking powder and salt and carefully mix in just until combined.
2 ¼ cups all purpose flour, 1 teaspoon baking powder, ½ teaspoon salt
Then gently fold in the blackberries.
1 ¼ cups fresh blackberries
Spread Blackberry Lime Blondie batter in 9 inch square baking dish lined with parchment paper, or greased lightly with butter.
Bake 30-35 minutes, until cooked through.
Remove from oven and allow to cool completely, about 1 hour.
Meanwhile, prepare Blackberry Lime Glaze. In a small microwave safe bowl heat blackberries until they release juices, about a minute on low power. Smash blackberries slightly with a large spoon then strain the seeds out and combine with 1 tablespoon lime juice. Add powdered sugar to a medium bowl and whisk in blackberry juice mixture a couple tablespoons at a time until the glaze reaches pouring consistency.
2 cups confectioners sugar
Pour bright pink blackberry glaze over cooled blondies. Allow glaze to set for about an hour.
Then slice using a sharp knife into clean squares.
