Ingredients

pint
strawberries
hulled and diced (2 cups)
½
large
english cucumber
diced about ½ cup
3
medium
scallions
finely sliced
1
small
jalapeño
finely chopped (remove seeds for a less spicy salsa)
½
cup
basil leaves
thinly sliced
1
small
lime
zested and juiced
Salt and pepper
Instructions
In a large bowl, whisk together the lime juice, lime zest, salt and pepper. Add jalapeno and scallion to the seasoning.

3 medium scallions
Gently stir in cucumber, strawberries and basil.
1 pint strawberries,
½ large english cucumber,
½ cup basil leaves
Add cucumber.
Add salt and pepper, to taste. If you'd like it sweet add a little honey or maple syrup. Or it it needs more acidity add more lime juice.
Serve immediately or allow flavors to meld for 30 minutes or longer before serving.
