    Studded with fresh blackberries throughout and topped with a layer of bright pink blackberry glaze these delicious juicy berry blondies are perfect for summer!

    This berry blondie recipe is a cake blondie with a fluffy texture from whipped butter. They’re super moist with a fudgy cake-like texture similar to butter cake or cake pops. 

    Blackberry Lime Blondies are such a fun blondie recipe with lots of blackberries and bright lime flavor!

    Ingredients

    • Unsalted butter
    • Granulated sugar
    • Confectioners powdered sugar – for the blackberry glaze.
    • Large eggs
    • Fresh squeezed lime juice – if you find this lime bar recipe is too tart or too full of fresh lime flavor then you can reduce it by up to a ⅓ cup, substituting the omitted amount for dairy milk or alternative milk of your choice.
    • All purpose flour
    • Baking powder
    • Fine salt
    • Fresh blackberries – divided into 1 cup and ¼ cup portions for the batter and the glaze.

    Step by step instructions

    1. Beat butter and granulated sugar until fluffy.
    2. Add the eggs, one at a time, fully incorporating after each addition.
    3. And beat in lime juice, reserving a little for the glaze.
    4. Whisk flour, baking powder and salt and carefully mix into lime juice batter just until combined.
    5. Then gently fold in the blackberries.
    6. Spread Blackberry Lime Blondie batter in 9 inch square baking dish lined with parchment paper, or greased lightly with butter.
    7. Bake 30-35 minutes, in a preheated 350 degree oven until cooked through.
    8. Remove from oven and allow to cool completely, about 1 hour. 
    9. Meanwhile, prepare Blackberry Lime Glaze. In a small microwave safe bowl heat blackberries until they release juices, about a minute on low power. Smash blackberries slightly with a large spoon then strain the seeds out and combine with 1 tablespoon lime juice. Add powdered sugar to a medium bowl and whisk in blackberry juice mixture a couple tablespoons at a time until the glaze reaches pouring consistency.
    10. Pour bright pink blackberry glaze over cooled blondies. Allow glaze to set for about an hour. 
    11. Then slice, serve and enjoy!

    How to serve

    Serve Blackberry Lime Blondies without the glaze, or use any glaze of your choice. Top each square with a quarter slice of lime or lime zest curls.

    You can stir any leftovers into vanilla ice cream. These bits make the BEST frozen pie crust or cobbler chunks because they stay soft and pie-like even after freezing. Or use Blackberry Lime Blondies as a base for a delicious ice cream sundae. The berry blondies are delicious with coconut ice cream and blackberry syrup!

    Ingredients

    • ⅔ cup fresh squeezed lime juice 1 tablespoon reserved for glaze
    • 2 ¼ cups all purpose flour
    • 1 teaspoon baking powder
    • ½ teaspoon salt
    • 1 ¼ cups fresh blackberries about 6 ounces divided into 1 cup and ¼ cup portions for the batter and the glaze

    Instructions
